Dave's Hot Chicken Masterclass
The heat ladder, level by level
The course runs in the same order you will taste it. Each level pairs a cut, a sauce, and a cooling side, so you never cook heat you cannot balance. Start at mild and stay there, or climb to Reaper once your dredge and your fryer timing hold steady.
Want the full breakdown of each sauce and what it does to the crust? Read the heat levels and sauces guide.
Choose your plan
Three ways to enroll in the Dave's Hot Chicken Masterclass. Every plan includes the tenders, sliders, and wings modules, the sauce builds, and the full heat ladder from mild to Reaper. The difference is how much time you get with the kitchen.
All plans, lifetime access to your level
What the course covers
Six modules, cooked in order. Each one ends with a plate you can compare against the next, so you always know what changed and why.
The heat ladder as real objects
You will build each sauce from whole spices and learn how the powder color, the oil temperature, and the resting time change the bite. Nothing is a shortcut packet. Once you can read the color of the chili paste, you can dial any level up or down on your own stove.
The enrollment form above lets you pick where you want to start. If you are new to frying, most people start at mild and move up after their second batch.
Before you enroll
Short answers to the questions we get most often from home cooks signing up for the Dave's Hot Chicken Masterclass.
How soon can I start after I submit the form?
Enrollment goes through in the order it arrives. Once we confirm your plan, we send the login details and the first module. You can begin the same day you get that email, or save it for a weekend cook when you have the kitchen to yourself.
Do I need a deep fryer?
No. A heavy pot and a thermometer will do. The course shows how to hold the oil at the right temperature in a pot on the stove, how to skim and strain it, and when it is time to change it. If you already own a countertop fryer, the same temperatures apply.
Can I start at Reaper instead of mild?
You can, though the Reaper module assumes your dredge and your oil temperature are already steady. If you go straight there, expect to repeat the first two cooks more than once. The Full Ladder plan gives you all levels in order, which is the path most people take.
What does the coaching call include?
On the Kitchen Table plan you send photos of your finished plate, and we send written notes on the crust, the sauce, and the heat level. Then we schedule one call per level to talk through what to adjust on the next cook. The calls are scheduled during our working hours, Monday through Friday, 9:00 AM to 6:00 PM.
Is this a live class or something I watch on my own?
The lessons are recorded so you can pause, rewind, and cook along at your own pace. The Kitchen Table plan adds the live coaching calls on top of the recorded modules.
What if I need help choosing a plan?
Call +1-901-555-0844 or email [email protected] and tell us how you like to cook. We will point you to the level that fits. You can also read more about the dishes you will cook or browse the course page first.
Ready to cook the full ladder?
Choose a plan above, send your details, and we will take it from there. If you are still deciding, read the heat levels and sauces guide, then come back and pick your starting level. Either way, the first batch is the one that teaches you the most.
